How to make coffee fit for a President (of Hack Manhattan)

Grinding
We use either a Chemex or Aeropress (not discussed).
You want the grind to be finer than for french press, but coarser than expresso grind/play sand Don't use a whirly blade grinder. We use a hand operated Hario Ceramic Slim grinder. Electrics are too expensive.
You need 2 tablespoons per cup of coffee (5 oz liquid)
Lower left pile is a good grind. Above is too fine, lower right is too coarse.
Water
You will need 5 oz cold water per tablespoon of coffee. Measure it out and bring to a boil. Pop the top of the kettle and wait about 1 minute (195-200F).
Filters
Rinse the Chemex. Put the filter in the Chemex - seperate filter so 3 folds are at the back and 1 fold near the spout. Rinse filter to remove papery taste. Add coffee and gently tap to settle grounds. Pour enough water on to wet the grounds but not float them. Wait 30 seconds. Let it bloom. Slowly pour water in a spiral pattern, take about 3 minutes to pour in total. Avoid dry and wet spots.
Remove filter carefully, and enjoy your coffee.
